Ferrum Chardonnay
Ferrum Chardonnay is made from a single vineyard on Crystallum’s own land at Shaw’s Mountain, just outside the Hemel-en-Aarde region near Hermanus.
Latest release (2024)
A beguiling expression of this single vineyard that shows the complexity this site can offer. Greengage, quince and blackcurrant leaf lead on the nose as well as lemongrass and jasmine. The palate is edgy and bright, with citrus, white pear and aniseed against a puckering wet stone texture that elongates the finish. Deft oaking rounds the edges beautifully.
Vinification
The wine was whole-bunch pressed with no enzymes, sulphites added at pressing. After an overnight rough-settling, the juice was sent to barrel, with a spontaneous fermentation and ageing taking place over 10 months in 300 and 500-litre barrels, 20% of which were were new oak.
